Peanut Butter Pie and Obsessions

Here's a delicious and creamy peanut butter pie recipe. You can throw it together in just 10 minutes, and it makes for a stunning dessert for a party or having friends over.

My obsession with pumpkin pie started about a month ago.  Pumpkin pie is that guy my parents just don’t approve of. You know the one you’re texting during dinner, day dreaming about during family games and sneaking down to see at 2am.

Which is why I have been cut off. I’m almost glad the cut-off happened when it did, though. It’s not that turning orange in the continuance of our relationship would have bothered me. Rather it's forced me to try new pies… and I love it! I love it because pies bring happiness to even sweet-haters. And who doesn't want to turn a sweets hater into a sweets lover?! Here's my first pie since making pumpkin for a month:

Peanut Butter Pie with Chocolate Crust, Filling Recipe by Gale Gand

Ingredients:

Crust:

  • 15 chocolate cookies, cooked until almost all moisture is gone
  • 1/4 cup butter, melted

 

Peanut Butter Filling:

  • 8 ounces cream cheese
  • 1/2 plus 2 tablespoons peanut butter (I used smoooth, but you can use chunky too.)
  • 1/2 cup milk
  • 3/4 cup powdered sugar
  • 1 cup cream, whipped
  • 1-ounce semi-sweet chocolate for shaving (I just chopped this so that I could keep the texture of the chocolate.)

Directions:

  1. Put the chocolate cookies in food processor and grind until it has a sandy-texture. Pour into a bowl and stir in butter. Press into a pie dish, set aside.
  2. Whip your cream in a medium bowl until it had body, but still does not form completely solid peaks.
  3. In a mixing bowl cream together the peanut butter, cream cheese and powdered sugar. Slowly add the milk, then the whipped cream. Cream until incorporated.
  4. Spoon your peanut butter mixture into the prepared pie dish with the crust. Chop the semi-sweet chips (or shave over pie) and sprinkle them on top of the pie.
  5. Refrigerator and serve! Wa-la!
