This week’s mom escape gets you out of the kitchen and outside playing ball with the kids. Although the crock pot can cook up some winter friendly comfort food, it can also allow you to enjoy your summer and still get delicious meals on the table. Start with these extremely simple and fast ideas, and always experiment with new ones.
This is so ridiculously easy, it doesn’t seem like it would be good…but it is!
- 1 Pork Tenderloin
- 1 12 oz bottle of root beer
- Barbecue Sauce
- Hamburger buns
Place the pork tenderloin in the slow cooker. Pour the root beer over the pork tenderloin. Cook on low for six to seven hours, until pork is fully cooked and easily pulls apart. Pour the desired amount of your favorite barbecue sauce over the pork and serve on the hamburger buns. You can serve it with a simple salad.
- Pork Spare Ribs
- Teriyaki Sauce
Again, this is so easy, it feels like cheating. I usually make rice and a cool salad with it. Put the spare ribs in the slow cooker, and evenly pour teriyaki sauce over them. I usually use about a cup of sauce for every four pounds of ribs. I use Soy Vay Veri Veri Teriyaki. Cook on low for eight hours or high for four hours. Done and done.

- Salsa Verde
- Tortillas, cheese, lettuce, tomato, or whatever you want to add
I usually use about one large jar of salsa for every four pounds of pork. Pour the salsa over the pork in the slow cooker and cook on low for about six hours or until thoroughly cooked and pork pulls apart easily. You can be pretty creative with how you eat your carnitas. Our family likes to put it in tortillas with lettuce, tomato, cheese, and cilantro, but you could put it on top of a salad, or mix it up with whatever sounds good. It’s so yummy!
